Abstract
This research consists in the application of an exergy analysis method to the fishmeal production process. A mathematical expression for the enthalpy of fish as function of temperature and weight fraction of proteins, fats and water was developed and used to obtain expressions for the entropy and exergy respectively. The enthalpy, entropy and exergy expressions for fish were effectively applied in the exergy analysis. This was verified through reasonable and realistic results of this analysis. Parameters such as: the exergy losses, destruction ratios, the exergetic efficiency, effectiveness, the irreversibility and the potential improvement of the system were included in the exergy analysis. This analysis revealed that the process of coking is highly irreversible and, the loss and destruction of exergy ratios in the drying process are high. A parametric study was also performed. This study allowed to model the exergy performance of the cooker and dryer, when working at temperatures below the point of normal operation of the equipments. The results of this analysis in the cooking process demonstrated that at temperatures under the operation point, the irreversibilities of the process diminished. These results produced low values for the potential improvement of the system, whereas at temperatures over to the operation point, the opposite was obtained. In the drying process, low temperatures, below to the operation point, increase the irreversibility of the process. This generated a major opportunity for improvement of the process. The opposite effect occurred when the product leaving the dryer had temperatures over the normal operation point. Therefore, the application of this parametric study to critical processes as the cooking and drying processes, allowed to identity critical parameters for optimal performance of these equipments. This provided insight of the functioning of these equipments and the possibilities of further improvement from the standpoint of the second law of thermodynamics.

Esta investigación consiste en la aplicación del método de análisis de exergía a los procesos de producción de harina de pescado. Una expresión matemática para la entalpía de pescado en función de la temperatura y de la fracción en peso de proteínas, lípidos y agua fue desarrollada y utilizada para obtener expresiones para la entropía y exergía respectivamente. La entalpía, entropía y exergía para el pescado fueron aplicados efectivamente en el análisis de exergía. Lo cual fue verificado a través de resultados razonables. Parámetros como los ratios de destrucción y pérdida de exergía, la eficiencia exergética, la irreversibilidad y la mejora potencial del sistema fueron incluidos en el análisis de exergía. Este análisis revela que el proceso de cocción es altamente irreversible y, que las razones de pérdida y destrucción de exergía en el proceso de secado son elevadas. Un estudio paramétrico también fue desarrollado. Este estudio permitió modelar el comportamiento exergético del cocinador y secador, cuando trabajan a temperaturas por debajo o sobre el punto de operación normal de los mismos. Los resultados de este análisis en el proceso de cocción muestran que temperaturas bajo el punto de operación ocasionan que las irreversibilidades del proceso disminuyan. Estos resultados producen bajos valores en la mejora potencial del sistema, mientras que a temperaturas mayores al punto de operación el efecto es opuesto. En el proceso de secado, temperaturas menores al punto de operación incrementan de la irreversibilidad del proceso. Esto genera una mayor posibilidad de mejorar el proceso. Lo opuesto sucede cuando el producto a la salida del secador tiene temperaturas por encima del punto normal de operación. En consecuencia, la aplicación de este estudio paramétrico a procesos críticos como son los procesos de cocinado y secado, permiten identificar los parámetros críticos para el optimo funcionamiento de estos equipos. Este estudio nos permitió apreciar el comportamiento de estos equipos y sus posibles mejoras desde el punto de vista de la segunda ley de la termodinámica.
