A Split-Plot experiment was made to find the relevant factors in the configuration of the dehydrator oven composed of a light bulb, a card board box, an air entrance, a grid and a chimney. The factors taken in consideration where the bulb, the diedrite used as a simulator for a dehumidifier, a fan to induce ventilation, and the time in which the samples were removed. The response variable was the weight of the mushrooms taken from five to 30 hours in increments of five hours. The results include a configuration of the oven with a 60 watt bulb, without diedrite and without induced ventilation. Following, the time the bulb must be on was determined with a single factor experiment: Time was the factor and weight of the mushrooms taken every three hours, from a minimum of nine to a maximum of 18 hours as response. It was established that the dehydration process should last nine hours, during which the bulb must be on. Finally, an economic feasibility analysis was performed using the Internal Rate of Return method. In order to compare the alternative of composting different amounts of mushroom scrap versus the alternative of producing mushroom flour with the scrap and the compost without them. It was found that for scrap amounts of four, 4.5 and five percent it is better to produce mushroom flour than only compost.
