Publication Consumidores potenciales de productos lácteos de leche de cabra en Puerto Rico: Caso queso, yogurt y dulces o postres(2021-05-07) Arellano Uribe, Juan A.; Comas Pagán, Myrna; College of Agricultural Sciences; Gregory Crespo, Alexandra; Ponce de León González, Leyda; Rodríguez Carías, Abner A.; Department of Agricultural Economics and Rural Sociology; Plaza Delestre, María de L.The main objective of this research was to determine the acceptability of Puerto Rican consumers towards dairy products from goat milk produced 100% in Puerto Rico and to determine the profile of the possible consumer. A survey was done to 649 participants and the results show that 65% of the sample (428 people) would consume a locally made goat cheese, 57% of the sample (374) would consume desserts or sweets, and 58% would be willing to consume goat's milk yogurt made in Puerto Rico. Results showed that the consumer profile for products made fron goat milk was mainly women with 64%, 61% belonging to the age group of 18 - 30 years, 44% with a bachelor’s degree, 60% with an income less than $ 20,000 USD and 66% currently single. Among the determining factors for consumption according to consumers are the low supply in the market and the high price of the few products that are available. While the profile of non-consumers was mainly women with 69%, from the 18-30 age group 69%, 46% with a bachelor’s degree with auniversity level, 74% with an income less than $ 20,000 USD and 69 % single. Results showed that the main factor according to non-consumers was the limited availability in the market and the main reason for not consuming is due to the lack of information, lack of knowledge of how to consume and the fact of never having tried any derivative of goat's milk.
