Publication Perfil de los consumidores de Mayagüez, Ponce y area metropolitana de la carne de res producida en Puerto Rico.(2012) Cartagena-Romero, Nicolás M.; Gregory-Crespo, Alexandra; College of Agricultural Sciences; Mejía Maymí, Luis; Pagán Morales, Melvin; Jiménez Maldonado, Alwin J.; Department of Agricultural Economics and Rural Sociology; Ortiz Rodríguez, Rosario A.This study was conducted to obtain consumers profile for beef in PR and know the tastes and preferences of consumers towards of PR’s beef. An instrument was designed and provided to 360 people in Mayaguez, Ponce and San Juan. The study showed that participants prefer chicken over beef. In addition, 84% of participants indicated that the cut of meat mostly consumed is ground beef, but participant’s preferred “churrasco” steak (skirt steak) and beef steak (bistec) with 31% and 30% respectively. Respondents indicated that they do not consume PR’s beef all the time (50%), because the price is higher, 31%. Furthermore 19% of participants would be willing to pay an additional 10¢ for PR beef, 18.3% would pay 25 ¢, 16.8% 50 ¢ and 15.4% 75 ¢.
