Publication Prevalencia y peligros asociados a infección con Trichinella spp. en granjas de cerdos del Este de Puerto Rico(2014) Figueroa-Robles, Tatiana; Latorre-Acevedo, José R.; College of Agricultural Sciences; Mesonero, Alexander; Negrón, Edna; Soltero, Fred V.; Rivera, Aixa; Department of Food Science and Technology; Matos, AbigailPork is the most consumed meat in the world and is a source of foodborne diseases. Trichinella spp. is an important zoonotic parasite that infects warm blooded animals and humans worldwide. Among domesticated food animals, pigs are the main host for Trichinella spiralis. Humans may be infected by eating the meat of infected domestic pigs and other domestic and wildlife animals. Domestic pigs under non-biosecure facilities and without hygiene protocols can have direct contact with different reservoirs animals of this parasite, which can endanger the pig production, intended for human consumption. A cross-sectional serological survey was conducted between May, 2013 and December, 2013 to estimate the antibody prevalence of Trichinella spp. and establish the risk factors associated with infection in domestic pig farms in the eastern part of the island of Puerto Rico. The prevalence of Trichinella spp. infection in domestic pigs it’s important to understand the risk of transmission of this parasite and to develop surveillance and control strategies. Four hundred seventy-two serum samples were tested in 99 farms in 32 east towns. The seroprevalence of Trichinella spp. antibodies was 1.28% in the 11 positive farms. The survey revealed that pigs that were in contact with wildlife animals were likely to be exposed to be infected with Trichinella spp. in our study. The artificial digestion method is recommended as a confirmatory test for serological positive animals. Muscles samples were collected from 4 pigs, where none of these animals were positive for Trichinella spp. Trichinoscopy showed the presence of cyst containing calcified material.
