    This research was aimed to evaluate the shelf life of a mixture of minimally processed fruits (melon cantaloupe, mango, pineapple, orange, grape, mandarine and carambola) under modified atmosphere with the addition of NatureSeal® and potassium sorbate. Treatments consisted of immersing the fruit mixture in a solution with NatureSeal ® and immersion in a solution of potassium sorbate. Once immersed in solution, fruits were packed in a modified atmosphere with nitrogen. This treatment was compared against a control (no immersion solution). After packaging, the product was stored under refrigeration at 5°C for 32 days. The shelf life of the product was evaluated for 28 days by microbiological testing for total aerobic, yeasts and molds, total coliforms and Escherichia coli. Also, parameters of pH, color, texture, composition of gases and weight loss were evaluated during the storage period. The microbiological analyzes showed the microorganism count reached at day 28, 4.40 log CFU/g for total aerobic and 4.37 log CFU/g for fungi and yeasts in the treatment solution NatureSeal® and potassium sorbate and control treatment 4.84 log CFU/g for total aerobic and 4.89 log CFU/g fungi and yeasts, resulting within the range of tolerance for fresh fruits. There was no presence of coliforms and E. coli in any of the treatments tested. pH showed no significant differences between treatments throughout the storage period. Color, showed no significant differences for chroma and hue parameters between the control and treatment in all fruits. Greater firmness was found in melon cantaloupe than pineapple; and firmness in pineapple decreased considerably during the storage time, being the control group the most affected. With the tests conducted it was concluded that the mixture of minimally processed fruits have a shelf life of 28 days under refrigeration at 5 °C with nitrogen atmosphere packaging, NatureSeal® and potassium sorbate.
