The use of natural antimicrobial solutions as an antimicrobial agents against pathogenic and spoilage microorganisms

Abstract
The fear of traditional preservatives from a particular public sector has challenged the food industry: “How do we create products with preservatives that the public will not be afraid of consuming?”. Curcumin and Propolis, two products utilized for centuries in traditional medicine, were used at different concentrations to eliminate pathogenic and spoilage microorganisms. The curcumin/ethanol solution concentrations were 31.25 ppm, 62.5 ppm, 125 ppm, 250 ppm, 500ppm, 921 ppm, 1,000 ppm, 1,382.6 ppm, and 1,842 ppm. Meanwhile, the Curcumin/DMSO solution concentrations were 15,000 ppm, 17,500 ppm, and 20,000 ppm. Propolis/ethanol solutions were prepared at concentrations of 5.9445%, 11,8890%, and 23,7780%. We employed a Kirby-Bauer Disk Diffusion assay to test the antimicrobial products of both of these products against Escherichia coli, Salmonella enteritidis, Pseudomonas aeruginosa, and Candia albicans. Although promising results were seen, propolis only presented statistically significant antimicrobial effects against the following microorganisms: Salmonella enteritidis, Escherichia coli, and Candida albicans.
El miedo a los conservantes tradicionales por parte de un sector concreto del público ha planteado un reto a la industria alimentaria: «¿Cómo podemos crear productos con conservantes que el público no tenga miedo de consumir?». La curcumina y el propóleo, dos productos utilizados desde hace siglos en la medicina tradicional, se emplearon a distintas concentraciones para eliminar microorganismos patógenos y alterantes. Las concentraciones de solución de curcumina/etanol fueron 31,25 ppm, 62,5 ppm, 125 ppm, 250 ppm, 500ppm, 921 ppm, 1.000 ppm, 1.382,6 ppm y 1.842 ppm. Por su parte, las concentraciones de las soluciones de curcumina/DMSO fueron de 15.000 ppm, 17.500 ppm y 20.000 ppm. Las soluciones de propóleo/etanol se prepararon a concentraciones de 5,9445%, 11,8890% y 23,7780%. Empleamos un ensayo de difusión en disco de Kirby-Bauer para probar los productos antimicrobianos de ambos contra Escherichia coli, Salmonella enteritidis, Pseudomonas aeruginosa y Candia albicans. Aunque se observaron resultados prometedores, el propóleo sólo presentó efectos antimicrobianos estadísticamente significativos contra los microorganismos siguientes: Salmonella enteritidis, Escherichia coli y Candida albicans.
