Caracterización de los coffee shops en Puerto Rico: Crecimiento e impacto potencial en la producción de café y desarrollo económico

dc.description.abstract This study focused on a descriptive analysis of the coffee shops market in Puerto Rico with the aim of visualizing the inherent characteristics of these establishments in order to understand the unprecedented growth of this market. Through a series of questions contained in a questionnaire provided to the owners of coffee shops, it was concluded that these establishments, in general, have been operating for an average of 5 years, have a maximum quota of approximately 45 people and have a rustic and familiar atmosphere. In addition, Likert scale questions were used to study the perceptions of the owners of these businesses and compare them with the perceptions of consumers who visit these establishments. The 80% of the owners of the establishments surveyed reported that it was very important that the coffee used in coffee shops came from of Puerto Rico, 97% responded that the quality of the coffee is very important when using it in their business and 86% reported that it is very important that a reasonable price is paid to the farmer and a fair wage for agricultural workers. Overall, these results are aligned with consumers' stated perceptions. Finally, the necessary information was obtained to be able to have an approximate value of the economic impact of this type of market on the coffee industry of the island. The data obtained reveals that each coffee shop buys on average 462 lbs of coffee per month at a price of $10.75 lb. When considering all coffee shops in Puerto Rico, they contribute approximately $17,879,400/year to the country's coffee industry. Among the two types of coffee shops surveyed, vertically integrated ones generate higher revenues, their consumers are mostly Generation X and the coffee shop frequents the highest volume of customers on weekends. Regular coffee shops generate lower incomes, their consumers are mostly millennials and it is more visited during weekdays. en_US
dc.description.abstract Este estudio realizó un análisis descriptivo sobre el mercado de los coffee shops en Puerto Rico cuyo objetivo principal era visualizar las características inherentes de estos establecimientos para así poder entender el crecimiento sin precedentes de este mercado. A través de una serie de preguntas contenidas en un cuestionario suministrado a los dueños de los coffee shops, se concluyó que dichos establecimientos llevan operando un promedio de 5 años, poseen un cupo máximo de 45 personas aproximadamente y cuentan con una ambientación rústica y familiar. Además, se utilizaron preguntas de escala Likert para estudiar las percepciones de los dueños de estos negocios y compararlas con las percepciones que poseen los consumidores que visitan estos establecimientos. El 80% de los dueños de los establecimientos encuestados reportó que era muy importante que el café que se utiliza en los coffee shops fuera de Puerto Rico, el 97% respondió que es muy importante la calidad del café al momento de utilizarlo en su negocio y el 86% informó que es muy importante que se le pague un precio razonable al agricultor y un salario justo a los obreros agrícolas. En general, estos resultados están alineados con las percepciones declaradas por los consumidores. Por último, se obtuvo la información necesaria para poder tener un valor aproximado del impacto económico de este tipo de mercado en la industria cafetalera de la isla. Los datos obtenidos revelan que cada coffee shop compra en promedio 462 lbs de café al mes a un precio de $10.75 lb. Al considerar la totalidad de los coffee shops en Puerto Rico, estos aportan un aproximadamente $17,879,400/año a la industria de café del país. Entre los dos tipos de coffee shops encuestados, los integrados verticalmente generan mayores ingresos, sus consumidores son en su mayoría de la generación X y el coffee shop frecuenta mayor volumen de clientes los fines de semana. Los coffee shops regulares generan ingresos menores, sus consumidores son mayormente millennials y es más visitado durante los días en semana. en_US
