Abstract
Crisps type baked products were made from a chickpea and wheat flour base. In the formulations, wheat flour was replaced with 10%, 20% and 30% chickpea flour and compared with a control (0% chickpea flour). The chemical aspect of crisps was evaluated by Aw, pH, water content, and the physical properties of texture, lightness, hue, and chroma. No significant differences (p≤0.05) were found in baked products compared to control in the analysis of texture, lightness, and color intensity, during the observation time. Significant differences (p≤0.05) found in Aw of all formulations, including control, over time. Significant differences were also observed between formulations containing chickpea flour compared to control, in all analyzes performed. Baked products with the greatest similitude to the control were those of the formulation 90:10. In this research, the reducing effect of 3 treatments (fermentation, alkaline soaking, and sprouting) on the phytic acid content in the chickpea was studied. Treatment were applied, respectively, to three groups of kabuli chickpeas for 48 hours. Phytic acid was analyzed by Haug and Lantzsch’s method to the independently treated chickpeas. Final phytic acid content of treatments were 0.15 % db for fermentation, 0.72 % db in germination and 0.52 % db in the alkaline soak. It was observed that processes associated to the fermentation and alkaline soaking treatments had a greater reducing effect (83 % and 46 %, respectively) than the fermentation and alkaline soaking steps per se. After 48 hours of fermentation or alkaline soaking there was no significant change in phytic acid content of treated chickpeas. Sprouting showed no reducing effect on phytic acid content. In the elaboration of a new “crisp”, with sprouted chickpea flour, 0.01 % of phytic acid was found. These treatments are recommended prior to the cooking of the chickpea for the reduction of phytic acid, in the food industry or in the home preparation.

Se elaboraron productos horneados tipo "crisp" basados en harina de garbanzos y trigo. En las formulaciones, la harina de trigo se reemplazó con harina de garbanzo en un 10%, 20% y 30% y se comparó con un control (0% harina de garbanzo). Se evaluó el aspecto químico del “crisp” mediante el Aw, pH y contenido de humedad, y las propiedades físicas de textura, luminosidad, tono, e intensidad del color. No se encontraron diferencias significativas (p≤0.05) en los productos horneados en respecto al control en el análisis de textura, luminosidad, e intensidad de color, durante el tiempo de observación. Se encontraron diferencias significativas (p≤0.05) en la actividad de agua de todos los productos de formulación, incluyendo al control, a lo largo del tiempo de observación. También se observaron diferencias significativas entre las formulaciones que contenían harina de garbanzo en comparación con el control, en todos los análisis realizados. Los productos horneados con mayor similitud con el control fueron los de la formulación 90:10. En esta investigación se estudió el efecto reductor de tres (3) tratamientos (fermentación, remojo alcalino, y geminación) sobre el contenido de ácido fítico del garbanzo. Se aplicaron los tratamientos, respectivamente, a tres grupos de garbanzos kabuli por 48 horas. El ácido fítico se analizó por el método de Haug y Lantzsch, a los garbanzos tratados independientemente. El contenido final en ácido fítico para cada tratamiento fue 0.15 % bs para fermentación, 0.72 % bs en germinación y 0.52 % bs en el remojo alcalino. Se observó que los procesos asociados a los tratamientos de fermentación y remojo alcalino tuvieron un efecto reductor mayor (83 % y 46 %, respectivamente) que los pasos de fermentación y al remojo alcalino per se. Luego de 48 horas de fermentación o remojo alcalino no hubo cambio significativo en el contenido de ácido fítico de los garbanzos tratados. El tratamiento de germinación no mostró efecto reductor en el contenido de ácido fítico. En la elaboración de un nuevo “crisp”, con harina de garbanzo germinado, se encontró 0.01 % de ácido fítico.
