Estudio de la estabilidad y aceptabilidad general del desarrollo de una barra cereal lista para el consumo utilizando harina de batata mameya (Ipomoea batatas)

Abstract
La presente investigación tiene como principal objetivo desarrollar una barra lista para el consumo que reúna las nuevas demandas de conveniencia del consumidor. Se realizaron tres formulaciones y se evaluó la preferencia y aceptación del producto desarrollado mediante un panel sensorial. La barra con mayor aceptabilidad fue utilizada para determinar el largo de vida útil del producto desarrollado utilizando los parámetros de color (L, a* y b*), textura (fuerza necesaria para penetrar tres puntos diferentes de la barra) y actividad de agua por un periodo de seis meses. Luego se determinaron las características nutricionales mediante un análisis proximal y se comparó con el valor reportado en la etiqueta nutricional del producto final. La barra con mayor aceptabilidad fue la formulación que tenia 25% avena, 15% harina de batata mameya, 10% mango mayagüezano deshidratado, 50% miel, sal y ácido cítrico. Luego de 12 semanas de almacenamiento, no se observaron cambios en la actividad de agua, textura y saturación, pero sí cambios en la tonalidad. En el análisis proximal se pudo determinar que la barra cereal contiene valores por encima o similares a barras comerciales y elaboradas por otros científicos. Cuando se compararon estos valores con los obtenidos en la tabla nutricional del producto final se pudo catalogar la barra cereal como una barra fibrosa y energética, ya que una porción de 28g aporta 100 calorías y contiene 6.58 ± 0.21% de fibra dietaría total y 79.24 ± 0.21% de carbohidratos. Las barras cereales pueden considerarse una buena fuente de carbohidrato y puede promover energía cuando se utiliza como suplemento luego de hacer ejercicios.

The main objective of this research is to develop a ready-to-eat bar that meets the new consumer demands for convenience. Three formulations were made and the preference and acceptance of the developed product was evaluated in a sensory panel. The bar with the highest acceptability was used to determine the shelf life test of the product using parameters of color (L, a* and b*), texture (force necessary to penetrate three different points of the bar) and water activity for a period of six months. Then the nutritional characteristics were determined through a proximate analysis and compared with the value reported on the nutritional facts of the final product. The bar with the highest acceptability was the formulation with 25% oats, 15% sweet potato flour, 10% dehydrated mango “mayagüezano”, 50% honey, salt and citric acid. After 12 weeks of storage, no changes in water activity, texture and saturation were not observed. However changes in hue were recorded in formulation B. With the proximate analysis it was possible to determine that the cereal bar contains values above or similar to commercial bars and elaborated by other scientists. When these values were compared with the one obtained in the nutritional facts of the final product, the cereal bar could be classified as a fibrous and energetic bar, since a 28g portion provides 100 calories and contains 6.58 ± 0.21% of total dietary fiber and 78.83 ± 0.21% of carbohydrates. Cereal bars can be considered a good source of carbohydrate and can promote energy when used as a post-exercise supplement.
