Abstract
The Senepol bovine breed is a meat-type Bos taurus well adapted to the tropical climate, such as that found in Puerto Rico. This breed has proven to be an important addition to the genetic group of cattle that are raised in countries with a tropical climate. Its handling characteristics in the field and good carcass yield have favored it. Nevertheless, there are few publications that show their carcass characteristics and meat quality properties. This study evaluated the beef quality attributes of 26 Senepol intact males slaughtered at 8, 10, 12, 14 and 16 months of age to estimate if there is any specific age or range of ages with better quality. Samples were collected from the Longissimus dorsi lumborum (LDL) and Semitendinosus (ST) muscles from the left carcass side. Samples were evaluated for: pH, color (levels of L*, a*, b*), raw and cooked tenderness, percentage of intramuscular fat and fatty acid profile. There was an effect of age (P < 0.05) on the acidity of the meat (pH). The animals processed at 8 months of age had the highest average pH of 5.72, while at 16 months the lowest of 5.54. Despite the differences between the ages, the pH is considered to be within the acceptable / normal ranges. Color measurements were analyzed according to their L*, a*, and b* values. In luminosity (L*), there was no difference between the ages at slaughter (P > 0.05). There were differences (P < 0.05) in the value of a*, the 8-month-old animals were those with the lowest red pronunciation and the 16-month-old animals had the lowest intensity. For the value of b* there were differences (P < 0.05) between the slaughter ages, those of 14 months presented a less intense color towards yellow compared to those of 16-month-old who did present to be more intense towards this color. Among the muscles, LDL was less luminous (L*), more intense towards red (a*) and less intense towards yellow (b*) than ST (P < 0.05). The tenderness estimated by WBSF was not affected by the age at slaughter, neither in its raw nor cooked state (P > 0.05). But when comparing the tenderness between the LDL and ST muscles, we found that there were differences between both the raw and the cooked samples (P < 0.05), making LDL as the least tender muscle. On average, Senepol meat presented values of WBS from 4.96 kg up to 5.99 kg, which in the USDA standards would be considered not tender. The percentage of intramuscular fat was not affected by age, nor were there differences between the LDL and ST muscles, remaining on average as lean meat (1.74%). The 10-month-old animals presented the lowest % of intramuscular fat at 1.06% vs those of 14 months that presented the highest with 2.12%. When considering all the evaluated variables, the age at which the best quality of meat was obtained was at 10 months, presenting low pH, the lowest amount of percentage of intramuscular fat and a tendency of the lowest average cooked tenderness. When evaluating the fatty acid profile, it was observed that the Senepol breed has more unsaturated fats than saturated, with presence of Omega 3 and Omega 6 fatty acids, making it a healthy meat. We can consider Senepol beef as lean, healthy, with a good color and slightly tender.

La raza bovina Senepol es un Bos taurus de tipo carne bien adaptada al clima tropical. Esta raza ha demostrado ser una adición importante al de ganado bovino que se cría en países de clima tropical. Sus características de manejo en el campo y su buen rendimiento de canal le han favorecido. Sin embargo, son pocos los trabajos publicados que evidencien sus características de canal y propiedades de calidad de la carne. En este estudio se evaluaron los atributos de calidad de la carne de 26 machos intactos de la raza Senepol procesados a 8, 10, 12, 14 y 16 meses de edad para estimar si hay alguna edad específica o rango de edades con una mejor calidad. Se tomaron muestras de los músculos Longissimus dorsi lumborum (LDL) y Semitendinosus (ST) de la media canal izquierda de un total de 26 animales. Las muestras se evaluaron para: pH, color (niveles de L*, a*, b*), terneza cruda y terneza cocida, porcentaje de grasa intramuscular y el perfil de los ácidos grasos. Se observó un efecto significativo de edad (P < 0.05) sobre la acidez de la carne (pH). Los animales sacrificados a los 8 meses de edad presentaron un valor de pH promedio más alto con 5.72, mientras que, a los 16 meses presentaron el pH más bajo con 5.54. A pesar de las diferencias entre las edades el pH se considera dentro de los rangos aceptable/normal. Las medidas de color se analizaron según sus valores de L* a* b*. La luminosidad (L*) no presentó diferencia entre las edades a la matanza (P > 0.05). Sí se presentaron diferencias (P < 0.05) en el valor de a* entre las muestras de las diferentes edades a la matanza, quedando los animales de 8 meses los de menor pronunciación hacia el rojo y los animales de 16 meses los de menor intensidad. Para el valor de b* hubo diferencias (P < 0.05) entre las edades, presentando los de 14 meses ser menos intenso en el color hacia el amarillo en comparación con los de 16 meses, que sí presentaron estar más intensos hacia este color. Entre los músculos, el LDL presentó ser menos luminoso (L*), más intenso hacia el rojo (a*) y menos intenso hacia el amarillo (b*) que el ST (P < 0.05). La terneza estimada por WBSF no fue afectada por la edad a la matanza, ni en su estado crudo ni cocida (P > 0.05). Pero al comparar la terneza entre los músculos LDL y ST encontramos que hubo diferencias tanto entre las muestras crudas como las cocidas (P < 0.05), quedando el LDL como el músculo menos tierno. En promedio, la carne Senepol presentó valores desde 4.96 kg hasta 5.99 kg, lo que en los estándares de USDA sería considerada como no tierna. El porcentaje de grasa intramuscular no fue afectado por la edad, ni se encontraron diferencias entre los músculos LDL y ST, quedando en promedio como carne magra (1.74%). Los animales de 10 meses presentaron el % de grasa más bajo en 1.06% vs los de 14 meses que presentaron % de grasa intramuscular el más elevado con 2.12%. Al tomar en consideración todas las variables evaluadas, la edad a la cual se obtuvo la mejor calidad de carne fue a los 10 meses, presentando pH bajo, la menor cantidad de porcentaje de grasa intramuscular y una tendencia entre el menor promedio de terneza cocida. Al evaluar el perfil de ácidos grasos se observó que la carne de los Senepol tiene más grasas insaturadas en comparación con las saturadas, con presencia de los ácidos grasos Omega 3 y Omega 6 haciendo esta una carne saludable. La carne de res de bovinos de la raza Senepol la podemos considerar como una magra, saludable, de buen color y levemente tierna.
