Publication Caracterización de los coffee shops en Puerto Rico: Crecimiento e impacto potencial en la producción de café y desarrollo económico(2022-05-20) Flores Collazo, Christian Joel; Tavárez Vargas, Héctor S.; College of Agricultural Sciences; Álamo, Carmen; Gregory-Crespo, Alexandra; Department of Agricultural Economics and Rural Sociology; Lorenzo González, EdgardoThis study focused on a descriptive analysis of the coffee shops market in Puerto Rico with the aim of visualizing the inherent characteristics of these establishments in order to understand the unprecedented growth of this market. Through a series of questions contained in a questionnaire provided to the owners of coffee shops, it was concluded that these establishments, in general, have been operating for an average of 5 years, have a maximum quota of approximately 45 people and have a rustic and familiar atmosphere. In addition, Likert scale questions were used to study the perceptions of the owners of these businesses and compare them with the perceptions of consumers who visit these establishments. The 80% of the owners of the establishments surveyed reported that it was very important that the coffee used in coffee shops came from of Puerto Rico, 97% responded that the quality of the coffee is very important when using it in their business and 86% reported that it is very important that a reasonable price is paid to the farmer and a fair wage for agricultural workers. Overall, these results are aligned with consumers' stated perceptions. Finally, the necessary information was obtained to be able to have an approximate value of the economic impact of this type of market on the coffee industry of the island. The data obtained reveals that each coffee shop buys on average 462 lbs of coffee per month at a price of $10.75 lb. When considering all coffee shops in Puerto Rico, they contribute approximately $17,879,400/year to the country's coffee industry. Among the two types of coffee shops surveyed, vertically integrated ones generate higher revenues, their consumers are mostly Generation X and the coffee shop frequents the highest volume of customers on weekends. Regular coffee shops generate lower incomes, their consumers are mostly millennials and it is more visited during weekdays.
